The present work deals with the social representations of the traditional gastronomy of the town of Chipilo, in the Mexican state of Puebla through ethnographic work. This population is a settlement of Italian immigrants who arrived in the country in the 19th century and has the particularity of presenting dynamics of cultural continuity such as language, parties, games and other items of daily life. The work is the product of an ethnographic approach to the aforementioned town and a work close to the recovery of the culinary tradition with Chipilen families.
